Step 1: Prepare rice according to package directions.
Step 2: Form the ground chicken into mini patties. Heat 1 tablespoon of oil in a medium pan over medium heat. Cook patties for 3 minutes on each side or until cooked through. Cook in batches if needed. Place cooked patties on a paper-towel-lined plate to remove excess oil.
Step 3: Place patties and teriyaki sauce in a medium bowl. Toss until each patty is fully covered with teriyaki sauce.
Step 4: In a small bowl, combine soy sauce, rice wine vinegar and ginger root.
Step 5: Heat the remaining oil in a large skillet or wok over high heat. Add cooked rice, green onion, bell pepper and soy sauce mixture; stir-fry for 3 minutes.
Step 6: Place rice mixture on serving plate and top with the teriyaki chicken. Sprinkle sesame seeds on top.
